Chicken & Veggie Power Bowl: Layer the Flavor, Boost the Nutrients (A Gentle Way to Support Digestion)

One of the simplest ways to support digestion and nutrient absorption is by layering flavor.

When food tastes good and feels satisfying, the body actually digests it better. Flavor signals the digestive system to get to work — increasing enzymes, stomach acid, and bile needed to break food down and absorb nutrients.

Herbs, spices, citrus, and healthy fats don’t just make meals more enjoyable — they support digestion and help the body get more nourishment from the food you’re eating.

That’s why I love meals like this vibrant chicken and veggie power bowl.

 

Ingredients:

Chicken drums: avocado oil, paprika and garlic powder, pink salt, pepper

Cauliflower Rice: fresh cilantro, lime juice, chili & lime seasoning (Whole Foods), splash of olive or avocado oil

Chickpeas: paprika

Veggies: sweet potatoes, carrots, Brussels sprouts, white onion, a few splashes of avocado oil

Seasonings for Veggies: oregano, basil, thyme, turmeric, onion powder, garlic powder, rosemary, salt & pepper, lime juice

Toppings: avocado, lime wedges, roasted pumpkin seeds, red cabbage sauerkraut, pink salt

Creamy Tahini Dressing: tahini, filtered water (1:1 ratio with tahini), garlic powder (generous pinch, Fresh lemon juice (1–2 splashes, to taste), pink salt (dash)

 

Directions:

1.  Prepare the chicken drums: Preheat oven to 350°F. Place the drumsticks on a healthy baking sheet, drizzle with avocado oil, and season generously by layering paprika, garlic powder, pink salt, and pepper to build flavor from the start. Bake until the internal temperature reaches 160°F about 25-30 minutes.

2. Prepare the cauliflower rice: Heat a little olive oil in a pan, add cauliflower rice, season with fresh cilantro, lime juice, and chili-lime seasoning. Warm through.

3. Season the chickpeas: Toss with paprika and set aside.

4. Roast the veggies: On a sheet pan, toss sweet potatoes, carrots, Brussels sprouts, and onion with all seasonings and a squeeze of lime juice. Roast at 350°F for about 25–30 minutes, adding the chickpeas in the last 10–15 minutes.

5. Assemble the bowl: Layer the cauliflower rice, roasted veggies, chickpeas, and tahini dressing. Top with sliced avocado, lime wedges, roasted pumpkin seeds, and a dash of pink salt. Serve with a lime wedge. *Optional red cabbage sauerkraut.

You may notice that I don’t list exact measurements for herbs, spices, citrus, or oils — and that’s intentional.

When it comes to flavor (and nutrition), cooking doesn’t need to be precise. Your senses are your best guide.

Smell the spices.

Taste as you go.

Notice what feels satisfying.

Using generous amounts of herbs, spices, citrus, and healthy fats is one of the simplest ways to boost both flavor and nutrient intake. These ingredients don’t just make food taste better — they support digestion, provide antioxidants, and add phytonutrients that help the body thrive.

Everyone’s taste buds are different, and that’s a good thing. You really can’t “mess this up.” If something tastes flat, add more. If it feels bright and balanced, you’re right where you need to be.

The more you practice seasoning this way, the more confident you’ll feel — and the more enjoyable and nourishing your meals will become.

 

🌱 Ingredient Quality (When It’s Available to You)

When possible, I recommend choosing organic or non-GMO ingredients, especially for produce and pantry staples you use often. This can help reduce exposure to unnecessary chemicals and support overall gut and skin health.

That said, perfection isn’t the goal. Using what’s accessible and realistic for you still counts — nourishment comes from consistency, not stress.

Focus on variety, balance, and enjoying your food. Those pieces matter just as much
